Mediterranean Savor: snow peas (mangetout)



With the arrival of spring, the vegetables are renewed in the fruit and vegetable stores. Among them they appear snow peas, a variety of pea, during a couple of weeks or so because their season is very short.
Snow peas and peas are characteristic of The Mediterranean basin. They both belong to the legume family because their seeds are in a pod.
Snow peas are very tender and quick to cook. For example, in the skillet sauté with a drizzle of extra virgin olive oil together with finely chopped garlic, as a starter or entrée.
